Pancake recipe

Ingredients
125g (4 oz) plain flour sifted
300 mls (1/2 pint) milk
1 large egg
pinch salt (optional)

 

Method
Kids - Measure ingredients and mix in a bowl.
Adults - Heat a non-stick frying pan (if not non-stick melt a knob of butter).
Turn heat down to medium.
Pour in a few spoonfuls of mixture and tilt the frying pan until base is thinly covered.
Cook for a minute or two until pancake can be gently lifted with a spatula.
Turn over or toss if you are feeling brave.
Cook for about another minute until golden then serve.

 

Savoury pancake toppings:
Grated cheese
Ham
Sweetcorn
Soft chopped or cooked vegetables eg. red pepper
Cooked chicken and mayonnaise

 

Sweet pancake toppings:
Lemon juice and sugar

Chocolate spread
Honey
Golden syrup
Soft fruit
Cooked sliced apples
Ice cream


Tip - put the toppings in bowls & let the kids get on with it.

 

Chocolate crispy cakes

 

Ingredients
Bar of milk chocolate
150g of rice crispies
12 paper cases

 

Method
Kids - Break chocolate into pieces in a bowl (not plastic or metal).
Important - Put one piece of chocolate in mouth!
Adults:  Put bowl in saucepan containing 5-10 cms of hot water.
Stir over heat until just melted.
Check bowl is cool enough to pass back to kids.
Kids - Mix rice crispies with melted chocolate.
Spoon into paper case

 

Tip - For Chocolate Crispy Easter Nests, just shape them into nests and add mini eggs.

 

Home-made chicken nuggets

Ingredients
Chicken breast
1 egg
Fine breadcrumbs (home-made or packet)

 

Method
Adults - Pre-heat oven to  a medium - hot setting
Slice chicken into small strips
Kids- Break egg it on bowl and stir with a fork until mixed.
Put breadcrumbs in another bowl and get a plate ready.
Dip chicken in egg then coat wih bread crumbs
Do not lick fingers and wash hands afterwards.
Adults - Place chicken evenly spaced on greased baking sheet and cook for about 20 mins
Cut one nugget in  half to check it's done.

Tip - serve with potato wedges below

Potato wedges - a healthier alternative to chips

Ingredients
Potatoes
Olive oil
Salt. pepper, dried mixed herbs - optional

 

Method
Adults - Pre-heat oven to a medium - hot setting
Kids - Scrub potatoes
Adults - Slice into thin wedges - leave skins on
Kids - Use pastry brush to brush potatoes with oil. Or, put a tablespoon of oil and the potato wedges in a clean polythene food bag. Hold the top tightly and shake until all pieces are coated in oil.
Sprinkle with salt. pepper, dried mixed herbs if you like.
Adults - Place potato wedges evenly spaced on greased baking sheet and cook for about 20 mins until golden and crispy.
Kids - Potato wedges are great with ketchup.

 

Tomato pasta sauce

Ingredients
1 tin tomatoes
1 onion - shopped finely
1 garlic clove - crushed
1 tbsp olive oil
mixed herbs
seasoning

grated cheese (optional)

 

Method
Gently fry the onion and garlic until soft. Add tomatoes and seasonings and simmer for about 10 minutes. Pour over pasta. Add grated cheese.

 

Other good additions:
Chopped peppers
Mushrooms
Sweetcorn
Ham
Tuna

Tip - lots of vegetables can be hidden in the sauce if the sauce is whizzed in a blender at the end before serving. This works best if the vegetables are orange or red (peppers, carrots) and are softened with the onions.

 

Salt dough - do not eat! it's for playing with!

Ingredients
3 cups plain flour
1 cup salt
approx 1 cup water

 

Method
Kids -
Measure ingredients and mix in a bowl
Model like playdough.
Adults - Dry out masterpieces in cool oven.
Kids - Can be painted and varnished when dry.
